Viticulture and Oenology
Vino 100 is proud to host the upcoming ACC wine course, Viticulture and Oenology, taught by Brian Hay. This is an extensive and in-depth wine course. Participants will be co-enrolled with ACC students pursing their degree. Students should be prepared to study outside of class in order to participate, take quizzes and write papers.
Course dates: Mondays, 6:00 - 9:30pm, Aug 24- Dec 7

Course Outline
A study of the growing regions, production, processing and distribution of domestic and international wines. Topics include types of wine grapes, varieties of wine, proper storage procedures, and the techniques of proper wine service.
Prerequisite: The student must be 21 years of age to register for this class.
Course Objectives
Upon successful completion of the course, the student will be able to: Knowledge based
- Discuss the history of wine production
- Explain storage procedures for the different types of wine
- Recognize requisite pieces of equipment
- Relate proper serving techniques
Skill based
- Demonstrate competency in wine etiquette
- Appropriately coordinate wines with menus
- Identify types of wine grapes, their growing regions and the wine varieties they produce

Chef Brian Hay
Chef Brian Hay has been working in the food service industry since the late 1980's, earning a number of degrees, both bachelors and masters, in the culinary field. Chef Hay also holds a Sommelier Diploma from the International Sommelier Guild.
Chef Hay teaches at Austin Community College and has been the Program Coordinator for the ACC Culinary Arts program for over a decade.
